A really lovely dressing good on anything! And it is SO beautiful to look at.
Growing up in an Italian home, we had salad with Italian dressing EVERY night. I am partial to vinaigrettes and make a lot of them!
Ingredients:
2 Red Bell Pepper, Soaked in hot water
3 Sun-Dried Tomatoes
½ cup Cold Pressed Olive
Oil
½ cup Water
¼ cup Raw Apple Cider Vinegar
1 clove Garlic
2 tablespoon Honey
Salt/Pepper
to Tast
Preparation:
- First, coarsely chop the red bell peppers and soak them in very hot water with the sun-dried tomatoes. Let them sit for 30 minutes to 1 hour.
When the veggies are done soaking, combine all ingredients in a blender and blend until creamy.
Tasted great on any kind of salad!
*Enjoy!!

Wow this sounds amazing. By 3 sundried tomatoes, do you mean whole tomatoes or tomato slices? Thanks
3.
Great except I would use purified water to soak. Tap water is chemical alphabet soup.
