Refreshing Ginger-Tomato Salad

Makes 2 generous servingsAdapted from a recipe by Rita L on RecipeZaar.
You can substitute agave nectar for the honey, if you wish.
Ingredients:
2 tablespoon raw apple cider vinegar
1 tablespoon ginger, finely minced
1 tablespoon raw
honey
½ teaspoon sea salt
2 cup cherry or grape tomatoes, sliced in half
¼ cup scallions or green onions, sliced
Preparation:
Mix all ingredients in a large bowl. Chill for at least half an hour to allow flavors to mingle. Serve and enjoy.

Refreshing indeed, all you have to say is ginger and I'm there!

This is really delicious and the colors are stunning (just love the deep red of cherry tomatoes with the green and white of scallions).

All I eat nowadays are things that are either sweet or tart. So anything with vinegar I like like! sounds pretty darn good :)
