Romaine Roll-Ups
This recipe is based on a recipe by Shazzie. It's very simple and very filling. Shazzie suggests 1 diced onion, but I found the onion unpalatable. She also includes mint as a suggestion along with the oregano and basil, but I didn't like that
either so my recipe doesn't include it. This is wonderful because it's so flavorful that it really doesn't require a dressing. Another plus is that all of the ingredients can be found at conventional grocery stores, which is nice when you live in the deep south middle-of-nowhere.
digests in 3 hours
1 large head of romaine lettuce
3 large tomatoes, finely chopped
1 4 oz box of alfalfa
sprouts
1bunch fresh cilantro, or to taste, finely chopped
2 avocados, diced
basil or oregano, finely chopped
1. mix all the filling ingredients in a bowl.
2. spoon a generous dollop of filling at one end of each lettuce leaf.
3. roll the
sides of the leaf over, and then fold it in half.
4. eat like a sandwhich
