Roshi's curried vegatable wrap
I’ve been making my curry for several months now, and today was looking for a new way to present it for some friends of mine who haven’t eaten much raw food. I decided to go with something simple, but still amazing. It turned out to be real beautiful, with a taste to match. Even better, my meat-mainly friends loved it. Delicious.

2 tablespoon honey
1 teaspoon salt
1 tomato
1 lemon,
juiced
1 cup olive oil
1 tablespoon braggs liquid aminos
1 tablespoon apple cider vinegar, (or to taste)
1 teaspoon turmeric
1 teaspoon cumin powder
½ teaspoon coriander powder
½ teaspoon asafoetida, (available at Indian markets
½ teaspoon paprika
1½ cup cashews
red chili powder to taste
4 leafs of lettuce, romaine or iceberg is good
2 cup carrots, shredded
1 cup walnut pieces
Put all ingredients for curry together into food processor and process until smooth. For each lettuce wrap, take one leaf, top with shredded carrots, then curry. Add on tomatoes, then walnut pieces. Easy!

This was EXCELLENT! Messy as heck...but tasted awesome! Even my kids and SAD hubby liked it (and that is a compliment!)

The asafoetida is actually a substitute for garlic. I made this recipe especially for my mom, who eats only Sattvic food (a more strict Hindu diet), which does not allow for the use of garlic, onion, and few other vegetables. So if you want to replace it, use a clove or two of garlic.
I have made this dish with onion as well, and it still tastes great.

Can i sub the asafoetida for a little onion maybe ???????
