Scrumptious Stuffed Mushies

As a long standing raw food eater, like most of you, I have developed a knack for rummaging through my fridge, pantry and garden, and throwing things together. Today I came up with these delicious stuffed mushrooms that I scoffed down in a flash.

Ingredients: 

4 small - medium portobello mushrooms
dash of cayenne pepper (optional)

Marinade:
1 lemon, juiced
1 tablespoon olive oil
1 teaspoon dried oregano
dash of sea salt
1 tablespoon shoyu

Stuffing:
2 tablespoons minced sun-dried tomatoes
½ medium tomato, diced
¼ cucumber, diced
small bunch of fresh chives (or a small scallion), diced
handful fresh basil, chopped
¼ avocado, diced
handful of baby spinach

Preparation: 

Combine the marinade ingredients in a small cup and stir well. Wipe the dirt from the mushrooms with a cloth, remove stalks and place upside down in a deep plate. Spoon over the marinade inredients to cover the mushrooms. Ensure every bit of the mushroom is covered (top and bottom) and allow to soak for at least an hour. When mushrooms have softened, remove them and place in a dinner plate, leaving the marinade juice in the deep plate. Mix the topping ingredients with the marinade juice and stir well until the avocado has broken down a little. Place baby spinach leaves over mushrooms and spoon over the topping. Sprinkle a dash of cayenne pepper to taste (optional). You can eat them imediately or allow to sit for a while...I did both. Enjoy.

what ever we make out of mushroom they taste well. i was happy after trying this out at yesterday night

That's true carnap. Omitting or substituting an ingredient doesn't have the same impact as a cooked meal. Not that I really remember cooking a cooked meal lol

Anyway, I ate the other two of those stuffed mushies later for dinner as a side and they were nice and soft and even more scrumptious. This is definitely going to be one of my staples.

That's what I love about raw food. You rarely ruin a recipe. Cooking has to be so exact...

This sounds great. The cucumbers would be so refreshing in the mix.
