Simple Delicious Sushi
After going raw, I really missed veggie sushi from Whole Foods. It was just brown rice, avocado and carrots with soy sauce and wasabi. I missed it so much that I decided to make a raw version.
1 cup quinoa, sprouted
2 avocadoes
1 cup carrots, peeled into long strips
raw
nori sheets
raw nori sheets
water
Sprout the quinoa. I just soaked it in a 1 1/2 of water for a few hours and then rinsed it once and it sprouted in less than a day.
Slice the avocado and peel the carrot into long strips.
Lay out the nori sheet and wet it a little with the water. Spread an 1/8 of an inch of the sprouted quinoa on closest 1/3 of the sheet to you. Place the slices of avocado on the quinoa and the carrots on top of that.
Roll it up tightly. You can add water to soften the nori roll as you roll it. Seal it off and wait a little while for it to dry before you cut it.
A serrated knife cuts these best.
Serve with shoyu and wasabi in an empty avocado shell.

Quinoa.Not a good idea for sushi!i had some iisues too!

Maybe let the Quinoa drain in a colander for a while and stir every once in a while to try to get all of the moisture out. Also, if your not concerned with the way the quinoa looks, you could squeeze out the water via a nut milk bag... I think i'll give this a try this weekend! Do you know how long Quinoa sprouts will last in the fridge? I'm away all day friday and into Saturday till about 6. I want to have these ready to make for Saturday night... what do you think???

I had a couple issues when I tried this (I don't think it is the recipe, I think it is me, LOL). I wet the nori of the first roll, as instructed, and it got so moist it never dried (ewww...). So I tried again and did NOT wet the second one (except a little to seal it off), and it was STILL too wet. Maybe it was the quinoa?? I don't know... :-(

Love the idea of using quinoa instead of rice; also really enjoyed the idea of using the empty avocado shell for your dipping. Nice reuse idea. :-) One less dish to wash, one little more bit of water conserved.
