This is a hearty meat-like recipe that only takes a few minutes to grind and mix. I often take this taco “meat” with me when the family is having a taco night. Pictured here with lettuce leaf, Pico de Gallo, Groovy Guacamole and Macadamia Sour Creme. If I’m planning ahead, I also like to make raw tortillas.
Based on a recipe by Matt Amsden. I’ve cut down on the Nama Shoyu, as this taste was a bit overwhelming for me, and added some cayenne for an extra spicy kick. This recipe is best with soaked walnuts!
1½ cup raw walnuts, ground in food processor
1½ teaspoon ground cumin
¾ teaspoon ground coriander
2 teaspoon Nama Shoyu or Braggs
Mix and serve.
I'm trying to be more raw in my diet to get away from so much processed foods. I was plesantly surprised by this recipe. Excellent.
I used a similar recipe (Ani Phyo's) tonight but didn't want it so nut heavy so I used brocolli stems as I forgot I had a head of brocolli in thefridge which was well past its best BUT it made a great taco meat with a small amount of walnuts to top a plain salad. Yum yum yum!
I love this recipe! Raw Taco Meat was my meat-eating husband's first introduction to raw food and he LOVES it. We use organic chili powder and cayenne powder for quite the kick. He likes it topped with a little cashew cheddar cheese, a spoon of cashew sour cream, and tomatillo salsa all wrapped in a sprouted tortilla. I love it on a bed of lettuce. Yum yum.
This is my first Raw recipe, I’m bringing to a pot luck, doubled the portions, hope it impresses.
My first recipe i have made from goneraw and I think its really tasty. I just ate it by itself. and added fresh coriander.
I think it would be really interesting in a salad or something else.
Do you soak the seeds if using pumpkin seeds instead of walnuts?
Yummy! I made tacos with this using "vegetable tortillas" And cashew chedder cheese from "Cheesy Kale Chips" recipe, along with a quick salsa and romain lettuce. Really something! Thanks, I was really craving Mexican food :).
I felt this was a bit nut-heavy for me, so I cut it half and half with babybella mushrooms, and and used white pepper instead of the cayenne. Even my non-raw bf was incredibly impressed!

Soak the walnuts in water so the water more than covers the walnuts. It softens them just a bit and also removes some bitterness from the skins. Then drain thoroughly before you grind them up.
When you say to soak....for how long in how much of what?
I made this for dinner this evening..delicious! These flavors go well together. I added a couple of squeezes of lemon to mine though..big difference...yum! I neither coriander nor walnuts on hand so I used almonds. I can't wait to try it with the walnuts, then again with pecans, then pumpkin seeds. I think I'll even sustitute curry one time for the cumin. I put my taco meat on top of a pile of fresh spinach with sliced, juicy red tomatos. Thank you for the bright idea Kandace! Thank you Kandace!!!! I made this for my defiantly SAD husband tonight (my first time to convince him to try a raw entree), and he LOVED it! He doesn't get super excited about food (prob'ly because he's so SAD), but his exact words after his first bite were "Wow! This is GOOD!" Never thought I'd be moved to tears by taco meat, but life is full of surprises :)

Just made this. I saw this in Matt Amsden book when I was at the book store and couldn't remember the 4th ingredient. I like the fact you added cayene for a kick and used braggs instead of Nama Shoyu. I made salsa and had some fresh guac too. THIS IS SOOOO GOOD! My hubby loved this better than the way we had it before! Thanks for posting this! Your version rawks!

This is a great recipe to have-I like spicy foods so I added chopped jalapenos with a bit of the seeds left in. YUMMY! These make the best lettuce wraps-my non raw hubby loves these!!
This stuff is heaven!!! It smells sicy and tastes so thick and meaty, but is a million times better. I didn't have any Nama Shoyu or Braggs on hand, so I made it without, and it still worked beautifully. I put this spicy walnut taco meat along with sunflower seed/almond cheese, shredded carrots, tomatoes, and spinach all together on a large collard green leaf and wrapped it up into a large burrito and cut it in half. It was soooo fresh and delicious!!! I'm saving the other half for mom to try. :)
do you think I could substitute sunflower seeds for walnuts?

I made the mistake of getting stoned before I made this. I think I must have eaten like 7 of these tacos. Let me just say, these are the best munchies ever, especially with a little raw hot sauce of sorts. I see many more of these in my near future. Deeeeeeelicious!
Very good, but I skipped the corriander and didn't soak the walnuts (didn't have time). I will make it again!
Raw walnuts are so expensive:( I see that people have made this with pumpkin seeds--do you still use 1 1/2 cups?
This was dalish. I added some sproated garbanzos to the mix and it was quite tasty. Thanks for the goodness.
Oh and why do we soak the walnuts (moisture?)...like I said I am new at this.
Does it matter what kind of walnuts?
I am new to going raw but I can't wait to try this. I wonder if I can get this past my hubby? He thinks lentils are an exotic food-lol
