As I was munching away on this throughout the day, I decided that the addition of shredded jicama would be really yummy! Next time, for sure. :)
½ butternut squash, peeled & shredded
2 granny smith apples, cored & shredded
1 mango, peeled & shredded
½ bunch of cilantro, finely minced
Add all ingredients [excluding lime] to a medium sized bowl.
Squeeze lime & add juice.
