If you are Italian like me :-) This is a holiday favorite. The much fattening version is what I used to eat. This was just as yummy.

Recipe Directions

1. Put everything but artichokes in food processor.

2. Once everything is chopped well and processed, take artichokes ( which you can use large ones also) and cut off about 1/2 from top and bottom so they can stand up in steamer basket.

3. Push all leaves apart so you can stuff most of the stuffing between as many leaves as possible.

4. Drizzle with lemon juice and a tiny amount of olive oil.

5. Steam for about 30 minutes. It depends on the size of the artichokes.

Im with you Mrsbatch... im new to this as well. I have been going Raw for 2 weeks now.. and I am only about 70% there still looking for ways to get compeltely there. I am just having a hard time.. Knowing what to eat and what not to eat. It makes me feel a little better knowing im not the only one.

Thanks..some of you... so much for your "understanding" I am only doing this new way of eating about 3 weeks and I am about 75% raw and struggling to find my way....trying to toss away 40 years of SAD way of eating...

I certainly wont make that mistake every again...Geez...

A raw diet is defined as at least 75% raw.

Everyone has a different journey of getting closer to that 100%.

You can eat an artichoke raw. Here's a recipe I found. It's got cheese sprinkled on top, so just ignore that part. ;) I'm gonna try this soon, it sounds yummy!

What about a tree hugging compromise and a few artichokes in a pot with a little water in the sun for an afternoon, like making sun tea? I'd totally sit on my lawn and be proud. It could be like a raw "barbeque" party. Just stuff it with raw stuff when it's done steaming lightly.

You can eat raw artichokes but it is a bit of a hassle. By cutting off as much of the outside leaves as you can, and removing the hairy part, you can clean the artichoke heart. This can then be very thinly sliced and marinated with olive oil, lemon and salt. I think that this recipe offered could be adapted very nicly with marinated raw artichoke. I have heard a few raw food nutrtion people say that, out of any food you could eat cooked, lightly steamed artichokes are the most healthful.

Geeez guys! I think we all need to chill here. Is this how we welcome a newcomer? As if the transitioning to raw isn't hard enough mrsbatch I am really sorry but it seems that some of us here have developed an extremist mentality. Guys may I remind you that half of the recipes on here aren't raw! Nama Shoyu, almost all agaves, maple syrup, stevia leaf powder and drops, frozen vegetables, almonds, and many more, NOT RAW! You are not a dummy! You are awesome! The forums on here are a great place with a lot of open minded people which are very willing to help you during your transition.

I ate raw artichokes when I made Cheflandria's Open Faced Sushi Recipe: http://www.therawtarian.com/community/recipe/open-faced-sushi

I couldn't find frozen, so I cut out the hearts of fresh (about three) and used turnips to fill it out. I didn't die, so I don't think they are poisonous. But again, I only used three hearts - so maybe it wasn't enough. I'll have to check it out before I make the recipe again (which was quite tasty, by the way)

Hi,

I realise you are new to raw, however this is a RAW recipe site!!!!!!!

Seeing a cooked recipe on this site makes my head start spinning like Linda Blair in The Exorcist - it's just wrong!!!!!

Seriously, this is RAW food.

Why would you even place a cooked recipe on a RAW recipe website??????

about the rhubard, only the leaves are toxic. the stems are fine raw or cooked.

Only certain parts of the rubarb are poisonous raw. The leaves I believe, don't know about artichokes.

I think they're poisonus if eaten raw (that's what i heard a long time ago)... But, then again, i heard that about Rhubarb too, but i've seen raw rhubarb recipes on here...
