Stuffed Avocado Salad

Simple, pretty salad. This is adapted from an old cookbook of mine, called Rose Elliot.

Ingredients: 

1 large ripe avocado, halved and pit removed
1 tablespoon fresh lemon juice
2 tomatoes, peeled and chopped
2 scallions, chopped
1 small green pepper, chopped

Preparation: 
  1. Scoop out avocados
  2. Dice and mix ingredients
  3. Scoop into skin of avocado and serve

Mmmm! I always say the chip is just a vehicle for the guacamole...now I can feel free to just use a spoon :D
