Recipe Directions

1. Half and lightly core 1 large eggplant. Rub with olive oil and salt.

2. Place in dehydrator for 4-6 hours (I put mine in during the morning). Chop and mix next 5 items. Cover and put in the fridge.

3. Chop and mix next 5 items and place in the dehydrator for the day with the eggplant.

4. Mix next 6 items and cover and place in the fridge.

5. Mix up your favorite marinara( mine is Ani Phyo's) or just chop some fresh tomatoes. If you have any bread made, you can crumble it on top of the assembled eggplants for the last bit of dehydration to warm before serving.

6. Fill eggplant with alternating layers of cheese, squish mix, mushroom mix, marinara, and bread crumbs.

7. Place in dehydrator until warm through about 1 hour.

Where do you get raw artichoke hearts? Do you just cut a fresh artichoke? And is it just olive oil that softens them or do you have to add salt, lemon, garlic, etc.? This sounds great - would it be as good if I leave out the mushrooms? I can see they're probably most of the bulk, but I don't use them.

Oh, omshanti... thank you for this. The recipe, too, but I mean thank you for triggering a happy, silly memory for me... my younger sister and I when we were little kids, jumping up and down in the kitchen going, "Yay, squish!!" whenever mom brought in a bunch of zukes & yellow squash from the garden. I got the lump in the throat and tears in my eyes. Sweet!

Oh yeah, and I'll try the recipe, too. ;o)

Ohmygod! Hahaha! The cadbury commercial used to have my sister and me in stitches every year... I always liked the lion the best, "happy easterbunny, BOCK BOCK!"

yay jenergy! im glad to add happy, misty thoughts to your day, i still call it squish...but then i still say "happy easterbunny, bock, bock" too...remember that commercial? was it for cadbury eggs or something? ah my infinate childhood, hope it never ends!;)

olive oil and dehydration soften the afresh artichokes and you can add lemon and garlic too if you want to them.... sounds delish! heck with the mushrooms use more squish mixture! (i just happen to love fungus)
