Summer Chopped Salad with Arugula Vinaigrette
I found this recipe in a magazine which credited Seriuosly Simple Easy Recipes for Creative Cooks by Diane Rossen Worthington
1 shallot
1½ tablespoon balsamic vinegar
2 teaspoon fresh lemon
juice
1 teaspoon dijon mustard
½ cup olive oil
salt/freshly ground black pepper to taste
¼ cup packed argugula leaves, coarsely
chopped
½ pound mixed salad greens, finely chopped
1 large ripe tomato, coarsely chopped
½ cucumber, peeled,seeded,cut into .25
dices
1 ear white/yellow sweet corn, shucked
Vinaigrette:In food processor, mince shallot,add vinegar,lemon juice,mustard,process to combine. Gradually add oil while machine running to make emulsified sauce. Add salt,pepper,arugula,pulse until well blended. Taste, adjust seasonings.
Salad Bowl: combine greens and vegetables, add vinaigrette. Toss until well coated
Dressing may be prepared 1 day in advance
