summer fruit salad with goji-mint dressing

4 servingsa summer staple for me on those long hot days!
Ingredients:
1 ripe papaya
1 ripe mango
1 green apple
1 cup
strawberries
¼ cup chopped mint
¼ cup soaked gojies
¼ cup goji juice (from soaking or bottled)
Preparation:
cut up fruits to desired sized peices. mix the mint and goji with the fruit. let marinate for at leaste 1/2 an hour enjoy!

goji is a type of berry sold in health food stores because of their high antioxidant content. I've only seen them dried. They are small and red and they're shaped like pumpkin seeds...kinda oblong.
