Sweet Summer Lettuce Wraps

These sweet, summery ingredients make for a perfect light lunch or dinner!
Ingredients:
1 Mango, peeled and diced
1 Tomato, diced
½ Avocado,
diced
¼ cup Onion, finely diced
¼ cup Bell pepper (any color), finely diced
½ Lemon, juice only, squeezed
1
tablespoon Apple cider vinegar
1 teaspoon Garlic powder (or 2 cloves, minced)
Salt to taste
Lettuce leaves (I used boston, romaine would work too!)
Preparation:
Mix all ingredients together in bowl and let marinate for a couple hours in the fridge. Put a couple spoonfuls on the lettuce leaves and enjoy!

oh you're right! very similar... i have never seen that one before! but yes, this does make a great dip for chips or crackers, and i just put the leftovers on top of a salad and it was a good dressing too! possibilities possibilities!

this is like the mangocado salsa on this site - super! It was one of the first recipes i had made after deciding to go raw :) You can make some chips or crackers and to with this mixture too!
