Sweet Sunshine Avocado Soup
A very refreshing, yet filling summer treat! Really quick and simple to make, with not too many ingredients.
1 clove garlic, (use more if you're a big garlic fan)
2 tablespoon fresh chives
¼ teaspoon sea salt
½ cup water, (balance with some olive oil for a richer taste)
Throw all ingredients but the water/olive oil in a blender (or food processor). While blending, slowly add the water/oil in until a desirable consistency is reached.
Garnish with chives and mint, as desired.
This goes quite well with guacamole and salsa, either on their own as a side salad, or wrapped up in a green burrito.
