Sweet Tangy Southern Barbeque Sauce.
A true southern treat. Thick, Sweet and Tangy BBQ Sauce. Combine with my “Grilled Steak” recipe for a authentic BBQ Beef experience that will fool a truck driver from Georgia. Great on top of NutLoaf also.
2 cup Half Dried Tomato halves., Cut in half laying on side and dehydrate halfway.
8 clove Dates. Large whole fresh., Not cloves of course. Use 8 whole Dates. Remove stone or
pit.
½ cup Red Onion, Quartered.
1 tablespoon Olive Oil, Cold Pressed, Unfiltered
1 tablespoon Lemon Juice, less than the juice from 1/2 of a
lemon.
½ tablespoon Rosemary, Dried
½ tablespoon Thyme, Dried
1 teaspoon Ground Coriander, Powder
1 teaspoon Paprika,
Dried
½ teaspoon Cayenne Pepper Powder, Dried
The tomato preparation is everything for this to be perfect. Lay a ripe tomato on it’s side and cut in half. You will have half a top and half a bottom from each tomato. I fill a whole tray in my Excalibur Dehydrator with the halves open face up. I run them until they are half done or maybe a litle more. Not dry at all! This makes about 2 cups.
Throw everything into the food processor and run until all chunks are completely gone. Be patient! It’s worth it.
You can add Garlic or more Cayenne if you like also.

I posted the crackers recipe. I used dried dates and I used cherry tomatoes that I dried myself. I just measured and 25 tomatoes yielded 1 cup dried. Uh-oh, it looks like I missed your Monday start date!

I'm making this on Monday (starting the process). Any idea how many tomatoes (what kind, etc...) and if i can't find fresh dates (which, i'm sure i won't be able to), can i used the dried ones? If so, how many? This sounds good. I'm going to make the BBQ Flax Crackers that someone else posted here. I'm making a double batch so that i can make some BBQ kebabs too! Yum!!!!

Dates aren't dried, if on the vine, hard and bitter and left out they will ripen i.e. get darker and wrinkled.

Although not from Georgia, my dad is a truck driver, so I know what you mean. Someday I want to try this out on him! :)

Sorry I really have no idea on the tomatoes. Depends on how large. I'm in a dry climate here also. 12-24 hours would be my best guess. Watch them!
In the UK we can get fresh dates from Iran. They are cheap, £1.59 for 1.45 pounds. They are also fantastic. From what I remember (2.5 years) you can get fresh dates in the US. I don't believe in any hard and fast 'eyeball' rule though, Check with the Manufacturer!!!
When I say fresh dates, I am not refering to the yellow ones. These are very sweet. They go off very quick if not kept cool. The bugs love them as much as we do.

I can buy fresh dates but they are definently not dried. They are a light yellow color and still on the "stalk or branch" or whatever you may call it. They have a very bitter taste, so i think thats the reason that dates normally are dried, to make them sweeter and more eadible

The dates I buy are labeled "fresh medjool dates". Are these raw?

hi chris. this sounds absolutely divine!! i have a question about the dates though. ive read severel places that they aren raw, because they are dried/dehydrated at a very high heat to get the desired sweetnes, and that some of them are rehydrated so they arent bone dry but moist. Is this true? i asked a friend whos in the know and he said that unless they are labelled sundried, and have a whiteish film on them,they arent raw. What are your view? My local grocer have theese really nice dates but they are not sundried and i want to be as raw as i can.

hey chris, about how long do you dehydrate your tomatoes? just approximately...i know it can vary a bit depending on location, elevation, etc
