I’d call this a non-salad because it’s so ridiculously simple…but I find many people have this odd fear of eating just a few things, or one thing, in a meal. I like to see recipes like this sometimes: small list of ingredients, small preparation time, big big nutrition and flavaaaa
1 enormous tomato, or a few smaller ones
2 or more tablespoons chopped FRESH herbs along the lines of coriander and parsley, maybe a little basil
a generous sprinkle of celtic salt
1 dash ground black pepper
chop up the tomato(s) and place in a colander with rather little holes over a bowl. toss the tomato(s) with salt so it is well mixed, and leave it in the colander to drain for about 15 minutes. the salt will draw some of the water from the tomato, giving the tomato a concentrated flavor. reserve the puddle of tomato water that will form in the bowl. toss the tomato with the herbs and black pepper, try it, and add in the salty tomato water to taste.
can also be used as a salsa.
