Tomato Red Bell Pepper Soup

Servings:
4 cupsThis is the best soup that I’ve ever made! Beautiful color, great taste, thick and creamy.
Ingredients:
2 red or orange bell peppers, seeded, roughly chopped
½ cucumber
3 small
tomatoes
½ red onion
1 jalepeno, seeded
1 teaspoon cumin
1 teaspoon seasalt or to taste
Preparation:
Roughly chop all of the ingredients, add them, a few at a time into the bender with enough water to get it going. I put diced tomato and avocado in the bowl and poured the soup on top. I gave it a stir and sprinkled it with a little ground pumpkin seed. I used one red, one orange pepper, but I don’t think the taste would change if you used either color of pepper.
