My new favorite light meal
½ cup dried shredded coconut meat
1 tablespoon lemon juice
1 teaspoon vanilla extract
½ cup water
Blend everything up and add more water if you want a more liquid consistency. You could also make a smoothie out of this by adding 1 1/2 cup coconut water.
I love this, it is delicious.
