Vegetable Pasta with Marinara Sauce
This is fabulous, I used onion instead of scallions. Also used lime instead of lemon and only a slight shake of the salt. I didn’t add the soaking water as I love my sauce thick.
3 raw sweet potatoes or yams or zucchini+, Process the veg of your choice thru a vege shredder or mandolin or spiral vege slicer so it will look and feel like angel hair pasta
8
ripe roma tomatoes, chopped
½ cup sun-dried tomatoes, soaked 2 hours (reserve soak water)
¼ cup chopped fresh parsley
2 scallions,
chopped
3 tablespoon cold-pressed olive oil
2 tablespoon Italian seasoning
2 teaspoon fresh lemon juice
2 cloves garlic,
minced
1 teaspoon Himalan Salt
Combine all in a blender and process until smooth and creamy. If necessary add some of the soaking water from the tomatoes for desired consistency.
Pour over the Vege spaghetti and serve. Enjoy!!!

Oooo...YUM. I've been looking for something like this, and I can tell we like the same ingredients. I'll have to try it out! :o)

No too sure but it is my understanding that wild rice is really grass seed... It should sprout easily for you, if so... I know before I became a rawfoodie, I enjoyed eatting the cooked wild rice instead of brown rice...

never heard using the sweet potato for a base , im gonna have to try it because not into the zuchini . what ive been wanting to try is finding a type brown rice that sprouts and using it for a sauce base , theres some that do sprout but not sure which yet . also , ive been wanting to try soaking wheat in a water seasoned with things like garlic / onion / pepper / basil / etc . then using it for a base when it sprouts tails .
otherwise the wheat may be too tasteless because the sauce wont penetrate its rubbery outer coating . bottom line here is that im trying to replace the pizza / spaghetti meals without getting into dehydrating because i see that as less than optimal . thanx for the 'sweet' idea ;-) , cheers !

I used a mandoline for the zuchini spaghetti. Sorry it took so long for a photo.
