Versatile Warm Garlic Hummus

Servings:
A week's worth for one, or a party of eightHits the salty, creamy spot at dinnertime. I’ve only used this as a paste on rolled romaine and kale leaves. Blend all ingredients. Thow 1/2 a carrot in the food processor if you want it chunky and sweeter!
Ingredients:
½ yellow onion
½ clove garlic
1 eggplant
1
zucchini

Zucchini is sooo much better than cauliflower in this, thank you RCB!! I've blended it on it's own and mixed it with fruit to make a fat-free version of radish_man's Fruit Fool http://goneraw.com/recipes/1627-Mixed-summer-fruit-fool

Yes, I like the idea of cauli as a base and i was thinking of adding some seeded zucchini to add a little creaminess. How do you think that would work Pear?
6.
Great idea to use cauli as a base for hummus instead of nuts and garbanzos which can be quite starchy, Will try it.

It's great to hear about new ways to eat veggies. Thanks.

juice of half a lemon
thanks for the kind words Marichiesa and RCBAlive

Pear, do you put half a lemon in the processor or the juice of half a lemon? I am intrigued by the recipe and really want to try it.

the morning glories are amazing

no oil and half a lemon. When you puree the cauliflower (a little water to get it all out of the mixer) it just tastes thick and midly sweet; compliments the other strong flavours quite nicely.

Sorry for the empty post. Do you taste the cauliflower taste or does it actually taste like hummus? I assume that you used the juice of 1/2 lemon. Is that correct? Did you use any additional liquid? Any oil? I am always looking for low fat/no fat recipes and I love hummus!
