White Hot Chocolate

Makes 1 large mug or 2 smallMy daughter requested something warm and sweet after being out in the cool fall air so I came up with a drink in her favorite flavor. She was ecstatic and finished it in about 30 seconds.
Ingredients:
1 cup water
1 tablespoon raw cacao butter
2 teaspoon alcohol-free vanilla extract
1 tablespoon raw agave syrup or to taste
.33 cup raw cashews
Preparation:
Combine everything in a high-speed blender and continue to blend until mixture is warm and smooth. Pour into a mug and serve!

Whoops. I got the raw cacao butter at www.alissacohen.com but they also sell it at my health food store. By the way, I tried it with macadamia nuts and it was not so good.

I made this recipe this morning for breakfast, and it was great! Thanks for the wonderful idea. I used almonds (I removed the skins), and about 1/2" of one of those big, fat vanilla beans you can buy at naturalzing.com. The white chocolate flavor really comes through. I'm going to make this for an upcoming potluck. :)

I found the vanilla extract at the health food store - it's made with glycerin. You could use vanilla beans too. The agave is labeled raw, there is a non-raw version, and you can order truly raw cashews online or you could use raw macadamia nuts.

Sounds great, but, I thought agave and cashews are not raw?
