Wild Rice Delight
Yummy. Hearty. Light. Nutty. Sweet. Filling!
8 ounce Organic Raw Wild Rice, Soak 1-3 Days
1 sprinkle Organic Raw Dried Cranberries
1 Organic Raw Apple, Chopped as
desired
1 Organic Raw Juicy Orange, Squirt out juice. Then dice as desired.
1 sprinkle Organic Raw Cilantro, Toss in leaves only, as desired.
Soak wild rice to desired softness. I soaked mine in the fridge for several days, changing the water several times. Though, I’m no expert at this – so I hope I did it right! The rice was soft yet firm, chewy and yummy. Some might want to soak it more…or maybe this variety does not soften up more? I used Lundberg Organic Wild Rice, “Exotic & Savory Wild Grain” and I’d suggest it to anyone comfy trying a hearty raw dish.
Toss in raw dried cranberries, as desired.
Chop up and toss in apple.
Pull off a tiny little bit of the orange peel – just enough to squeeze out some juice by hand, while keeping the orange intact. Coat the rice with the juice – to desired amount – and then peel, slice and toss the rest of the orange into the dish.
Pluck off and toss in as many little cilantro leaves as you desire.
Mix it all together and serve.
YUM - and ((so)) easy and filling!

I think that's true unless you purchase "Minute Rice" or some other "parboiled" rice - but that's probably stating the obvious, right?
The picture looks so tempting - I just purchased some wild rice b/c I saw a recipe in a book - I think it was Ani Phyo's Raw Kitchen. I love the way you've combined it w/ apples and other goodies.

My understanding (and I could be wrong) is that all rice is sold to us raw/unprocessed. The brand I bought (it's listed above) was found in a local store. I hope that helps! :o)
