Wild Rice Salad

Serves 1This salad is my favorite!!! It is bursting with wonderful fresh flavor!
Preparation:
- Place black wild rice in filtered water and let it sit for 2-3 days. Change the water several times.
- Cut some yellow or red onion.
- Cut a small amount of de-seeded jalapeno pepper.
- Chop and add about half of handful of cilantro.
- Add the juice of one or half of a lime.
- Add fresh pepper and celtic salt.
- Add some olive oil.
- Mix all the ingredients in a bowl.
- Cut some tomatoes, preferably heirloom.
- Cut some fresh corn directly from the cob.
- Cut some avacado and rub some celtic salt on it, then place in the salad.
- Add the wild rice.
Mix everything together!!

Flinzz78, this was really, really good! I didn't have any jalapenos, and instead of using avocado, I was really in the mood for some spice - so I used cilantro, ground corriander, ground cumin, a tiny bit of ground cayenne and woohoo! Instant cross between pico de gallo and your wonderful salad :)
As for the wild rice, mine took 12 hours to split and get kind of chewy, but I waited longer to get it to the right texture. I just kept tasting it :)

Sahara, like trinity082482 wrote, the rice will "split" and soften in a couple days. Just give it some time and you will be happy with the result!

This sounds lovely and fulfilling. I need to go get some black wild rice and give it a shot. I don't mind chewing extra. Thanks for sharing!

Does the rice ever gey soft?? I tryed soaking it once and it just stayed hard!
