Wild Rice Salad
Adapted from the LifeFood Recipe Book by Annie and David Jubb.- Apparently this was not the recipe to post. David Jubb’s book said Canadian Wild rice harvested by the Manitok, which is actually grass seed. Is it really raw? I don’t know. pound 1/2 - Wild rice, water for soaking
cup 1/2 - sweet onion, chopped
cup 1/2 - red bell pepper, chopped
cup 1/2 - cilantro, chopped
cup 1/4 - cold pressed olive oil
cup 1/4 - raw apple cider vinegar
tablespoon 2 - raw sesame tahini
tablespoon 3 - cold pressed flax seed oil
tablespoon 1 - grated ginger root
Soak the rice for 8 hours then drain and rinse. (I’d soak for a while longer). Sprout rice for 2 days rinsing at least 3 times a day and drain well. You can find a nylon mesh bag for sprouting (example on www.oneluckyduck.com which lists as a nutmilk bag but can be used for sprouting) or do it how you think it’ll work.
In a bowl combine sprouted wild rice and vegetables. Use the above or your own favorite dressing. Of course there are so many variations. I don’t use the onion because I can’t tolerate it and use less apple cider vinegar.
