Wild Strawberry Cheese Cake

8I don’t use a base for this cheesecake because I don’t tend to overdo it with the nuts but you could easily make a base from another recipe. enjoy!!
Ingredients:
2 cup raw cashews, soak for 6 hours
1 cup soft dates
1 cup coconut meat
1
teaspoon vanilla
1 cup strawberries
1 cup blackberries
dash coconut water as needed, just add small amounts
Preparation:
Blend all of the ingredients in a food processor and then transfer into a blender and blend until really creamy. Then place in a cake tin or small bowls, let them sit for a couple of hours and they are ready to serve!!

i think young coconut meat would be the best option for this. i made this tonight for dessert, and it was perfect except the blackberry seeds. if i had one suggestion for this recipe it would be to juice the blackberries instead of just blending them in whole. i think you would attain approximately the same results sans the nasty seeds.

Ooh, pretty! Is it young coconut meat, or mature coconut?
