Yummy lemmony treat
Submitted by shgadwa on February 28, 2008 - 2:02pm
I made this up myself while trying to use up some extra limes I had. It tastes like lemonade but its not a drink!
Ingredients:
2 lemons or limes
honey or agave
Preparation:
This is not really a recipe because it is too simple. Just peel the lemon and get the actual flesh itself separated from the skins (a little time consuming). Put in a bowl and drizzle with sweetener. Tastes kindof like lemonade only its a snack not a drink!

To get one thing cleared up, just in case, I threw out the peels and ate the lemon flesh, with honey. Its good!!
2.
You can peel the skin with a lemon zester.

It doesn't taste like straight lemon juice, but when agave nectar is added, it isn't as bitter. I do it all the time because it's good for vascular support. I add it to smoothies and salad dressings. I guess you have to acquire a taste for it. I like it and what it does for me. Hesperidin is good for RLS (restless leg syndrome).

Ooooooh...Thanks Chris! Although I can see that its going to be VERY difficult peeling the skin off without the pith!!!
5.
The peel contains a lot of essential oils. The white pith under it is the bitter part so you have to remove only a thing layer no white.

Just in case some do not know, NEVER use the peel of a non organic fruit in a recipe. Lemon peels have a lot of pesticides on then. You need to be sure to get organic or not at all.

But doesn't the peel taste bitter???

I sometimes do this using the whole lemon, peel and all, in the blender. It's good to add to other recipes. The peel is full of flavonoids (hisperidin) and has good health benefits

Sounds interesting...I'll have to try it sometime.

Maybe you can just soak your lemon peel or even a vanilla bean in your agave to flavor it and then add it to a recipe giving it that flavor :).
