Yummy Yogurt

This is pretty close to commercial yogurt in texture and tartness. I like to mix in some berries pureed with a little agave nectar, and sprinkle a little granola on top.
Ingredients:
1 cup young coconut meat
½ cup cashews, soaked for at least 2 hours
¾ cup
water
2 tablespoon lemon juice
1 tablespoon agave nectar
2 teaspoon apple cider vinegar
¼ teaspoon sea salt
Preparation:
Blend all ingredients in a high-speed blender until smooth, adding more water as necessary.
Transfer to a covered container and allow to thicken in the fridge for several hours.

This was really good. I spooned it on top of some strawberry & agave puree I blended up, and it was fabulous... and my husband liked it too!
