Zucchini Pasta

Ingredients:
zucchini , For "pasta"
Sauce
Two Bunches Spinach
One Bunch
Basil
1 cup Pine Nuts, Small soaking
½ cup Olive Oil
2 Cloves of Garlic
½ Juice of
Lemon
Sea Salt to taste
Preparation:
Allow pine nuts to soak while you cut zucchini. I used a vegetable peeler to cut strips.
Combine all ingredients (not the zucchini) in a food processor – drain pine nuts first – to make sauce
Add sauce to zucchini strips and enjoy!

The next time I make this I am going to cut the garlic amount down to one clove and maybe even less. I have noticed that since going raw I am more sensitive to taste - garlic being one taste that can become very overwhelming for me now.

Spinach added to pesto sauce, what a great idea! I've made this pasta but it was a bit too rich, so now I'm gonna try this! Thanks! =D
