Mom's Apple Pie
Serves 2-4 Depending on how hungry you are!
This is a Yummy pie that’s quick to make for breakfast, dessert or a snack! I made it this morning! I was sooooo Good! It would be great with some Rawsome Vanilla Ice Cream too!
Ingredients
- Crust
- 1 cup Almonds, Chop in food processor.
- 6 Medjool Dates, remove pits
- ½ teaspoon Cinnamon
- ¼ teaspoon Nutmeg
- ⅛ teaspoon Ginger
- 1 teaspoon Water
- Filling
- 1 Large or 2 Small Apples, Cored & Chopped. (peel if desired)
- 6 Medjool Dates, remove pits
- 3-4 teaspoons Lemon Juice, Depends on how tart your apples are
- 1/2 - 3/4 teaspoon Cinnamon
- 1/4 - 1/2 teaspoon Nutmeg
- 1/8 teaspoon Ginger
- 1/3 - 1/2 Cup Walnuts
- 2 tablespoons raisins (Optional)
- Topping
- 1 Large or 2 Small Apples, Cored & diced or sliced (peel if desired)
- 2-4 teaspoons Lemon Juice, Depends on how tart your apples are
- 2 pinches Cinnamon
Preparation
CRUST: Chop Almonds in food processor to a mealy consistency. Then add dates & spices & process until thoroughly mixed and slightly sticky. Add a little water & mix more if you want it stickier. Divide equally between 2 – 1 cup dessert bowls or 4 – 1/2 cup dessert bowls & press crust evenly into place & chill.
FILLING: Process apple until it begins to get a little saucey. Then add dates, lemon juice & spices & continue processing. Last add the walnuts & process until it looks fairly smooth & thick. Add the raisins if desired & quickly process just enough to mix them in. Divide equally into crust-lined bowls.
TOPPING: Chop 1 Large or 2 small Apples & toss in a bowl with lemon juice. This adds more flavor to less tart apples & also keeps the apples from discoloring. Put equal amounts on top of each pie & Sprinkle with a pinch of Cinnamon. ENJOY!
