Cantaloupe, Ginger, and Coconut Soup
Had this at a restaurant in Moab on a hot summer afternoon. It was absolutely delicious. I’ve modified it a bit to make it raw.
Ingredients
- 1 Large Melon (2 lbs or 900g), (peel and remove seeds)
- 3/4 or more Tbsp. grated ginger, (or more to taste)
- 1 Tbsp. Fresh Lemon Juice, (or more to taste)
- 1 tsp. Agave Nectar
- 1/2 Cup Coconut Milk
- Pinch of Sea Salt
- Chives for Garnish
Preparation
Blend all (except chives). Original recipe uses whipping cream instead of coconut milk. I suppose you could try using a heavy almond cream or something. It suggests stirring in after the mixture has chilled for 30 minutes.
Either way, it’s delicious chilled.
