Herby Cashew Cheese

Serves 1-2

A tasty herbed cream-cheese.

Ingredients

  • 1 cup cashews, Preferably soaked
  • 1 teaspoon mixed dried herbs
  • 1 tablespoon onion, Chopped
  • 1 teaspoon nutritional yeast (optional)
  • 1½ teaspoons lime or lemon juice
  • 1 teaspoon nama shoyu
  • 1 teaspoon spinach, Chopped
  • 1 pinch salt
  • ½ teaspoon garlic powder

Preparation

For some reason, this tastes nicer with the lime juice than with the lemon:)

The measurements are very rough- add the onion, juice, soy gradually!

Grind up the cashews (I use my mini nut grinder, it would have been better in a food processor).

Add 1/2 of the juice, 1/2 of the shoyu and 1/2 of the onion.

Add the dried herbs, garlic powder, yeast and salt. Process and check the taste again, gradually adding the last of the juice, shoyu and onion until the mixture reaches a thick houmous-type texture.

Mix in the chopped spinach and stir with a spoon.

Tastes yummy as a dip, in a lettuce wrap and is good to stuff red or green peppers with.

Hi writeeternity :) I made this yesterday with an italian mix of herbs (was tasty), but in the past I’ve used a mix of thyme and basil with a tiny pinch of rosemary.

Hi Chicken with a Gun! Thanks for the reply! Did you eat this on raw vegetables or chips (raw) or on bread? Do you have a preference? (as far as accompaniments go)
