Sesame Raisin Fudge
Make 21 sweets
Delicious sesame fudge, high in calcium if you use unhulled sesame seeds. Use hulled for a milder nuttier, halva kind of flavour. Great to offer your non-raw friends.
Ingredients
- one and a half cups sesame seeds
- 2 tblns carob or mesquite flour
- 2 handfuls dried raisins
- 2 tblns agave syrup or 1 tbln honey in a little warm water
- juice of one orange
- 2 tbln water
- carob powder for coating
Preparation
Grind up the sesame seeds in grinder until very fine. (Measurements given are for using a medium/large cup) Add the carob or mesquite and mix in with your hands rubbing out any lumps. Add the raisins, agave and orange juice. Mix in well. Add 1 tbln water at a time until you have a dough that can easily be formed into shape. Roll small pieces into balls and place in a box with carob powder. Roll balls around until coated. Voila!

These are simple, tasty and portable. They’re now one of my staple bike-commute energy foods :)
