Sticky Chocolate Sandwich

Makes about 8 sandwiches (16 rounds)

Sticky texture chocolatey sandwich for days of decadence. Finger-licking good!

Ingredients

  • 4 apples
  • 3 bananas
  • 1 small beet, grated
  • 1 cupful buckwheat sprouts
  • 1/2 cup ground flaxseed
  • 2 dessertspoons cacao powder
  • 1tsp cinnamon
  • dash seasalt

Preparation

Process all ingredients in the food processor, except the beet. Stir in the grated beetroot after everything is processed. Take about 1 tablespoon of the mixture and place on teflex sheet. Spread to a small cookie size and about 1/2 inch thick. They will thin quite a bit once dry. Dry at 145 for about 3 hours then turn down to 115 and flip over when they are starting to dry and can be flipped over to do the underside. Leave until sticky/dry. You don’t want them too dry.

Apricot Jam:- 1 cup dried apricots, soaked about 20 mins in warm water. pinch salt 1/2 tsp ginger

Process apricots with the ginger and salt, adding a little water to bind until you have a jam.

Make sandwiches using the apricot jam and chocolate sandwich rounds. Dust with lucuma or carob powder.

Alternatives Make a cream by blending cashew nuts and a little water. Put ontop of jam to make a victorian sandwich. Or make a thin pouring cream.

What does the shredded beet do in the sandwich? It looks liked powdered coconut on the outside. I can’t wait to try this! What was a Victorian Sandwich? When you say buckwheat sprouts how long did you grow them for? Did they have green tops? I was afraid to look at this recipe because it looked so good but it doesn’t look too bad for you! =*)

Hello there, the shredded beet is to darken the ‘sponge’, makes it look more chocolatey without adding too much cacao ( I find it quite fatty and can keep me awake at night), it also adds a little sweetness. It is lucuma powder sieved over the cakes. A victorian sandwich is cake that was traditionally served up in tea houses for afternoon tea by the gentry. Buckwheat sprouts are short, you only need to know that they’ve started the process, so about 2 days will be fine.

In place of buckwheat sprouts, you can use sunflower seeds. You can try wheatberry or spelt sprouts to see how they come out.
