Fresh Salsa

Our favorite salsa. It keeps well in the fridge, so I usually make a double or triple batch to keep everyone happy for a week at a time.

This is also really tasty if you add half a cup of this salsa to half an avocado and mash it all together. Serve with crackers/chips or veggie sticks.

PLEASE NOTE: I included this recipe in the Kids category, but it is not appropriate for children under one year.

Ingredients

  • 4 large organic tomatoes, washed and cut into chunks
  • 1 carrot, peeled and sliced
  • 1 jalapeno (or less, if you want milder salsa)
  • ½ cup fresh cilantro, washed and stems removed
  • ¼ red onion, peeled
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, peeled

Preparation

Put all ingredients into food processor and process until combined. Keep in refrigerator.

Sounds delicious! I like the idea of adding dates and cumin. I’ll try that next time!
