Rawcaroni Salad

Ingredients
- 2 Zucchini, cut into elbow macaroni
- 1 cup raw mayonnaise
- 2½ tablespoons prepared mustard
- ¼ cup apple cider vinegar, to taste
- 1 tablespoon agave nectar
- 1½ teaspoons salt
- 5 green onions, chopped
- 2 stalks of celery, chopped
- 1 red bell pepper, chopped
- 1 carrot, grated
- dash cayenne
- ½ cup pinenuts, soaked for 6 hours
- ¼ cup water
- 2 tablespoons olive oil
- 1½ tablespoons lemon juice

I made this recipe. If anyone thinks it looks good, you’re wrong. ITS WONDERFUL! ITS FANTASTIC! Its better than the real thing, and tastes like the real thing! Its so great, we had it for Christmas dinner! One tip. In my area the large zucchini aren’t available. I had to use the small ones. I just cut these in half, and used a spoon to take out the seeds. I then sliced the zucchini into pasta shapes. I used probably 10 small zucchini. This one is a keeper! It deserves 10 stars!

yeah-could you share your raw mayo recipe. I think a GOOD mayo would make all the difference when making this.

This salad is SOOO good! The fact that it is quick and easy makes it even better. I substituted peas for the peppers and added some dill- yum! Thanks for sharing, it is certainly one for the recipe box :)

Yes, this salad is sooooooooooooooooooooooooooooooooo good! Definitely a must for fellowships and picnics/bbq’s! Wow! The next time i make this, i’m going to substitute the cashews for sunflowers and pine nuts. I’ll let you know how that turns out!
