Squash Slaw

As I was munching away on this throughout the day, I decided that the addition of shredded jicama would be really yummy! Next time, for sure. :)

Ingredients

  • ½ butternut squash, peeled & shredded
  • 2 granny smith apples, cored & shredded
  • 1 mango, peeled & shredded
  • ½ bunch of cilantro, finely minced
  • 1 lime

Preparation

Add all ingredients [excluding lime] to a medium sized bowl.

Squeeze lime & add juice.

Toss thoroughly.

Chill.

Eat.

Enjoy!
