Sunny pate croquettes
about 8 servings
these croquettes are nice to put in wraps or use on top of salads.
Ingredients
- 1 cup sunflower seeds, soaked overnight
- 1 red bell pepper
- 1 celery stalk
- ½ chopped onion
- salt and pepper, to taste
- ½ teaspoon sage
- ½ teaspoon basil
- ½ teaspoon mustard powder
- ½ teaspoon thyme
- ½ teaspoon savory
- ½ cup nutritional yeast
- 1 carrot
- 1 clove garlic
- ¼ cup spelt, ground
- ¼ cup flax seeds, ground
Preparation
chop vegetables and ground the spelt and flax seeds to make flower. mix all ingredients in a bowl by hand and then take small quantity of mix and form into a ball. place the croquettes on dehydrator sheets and dehydrate 12-15 hr. enjoy!

they are good. I think you can make the mix without the spelt flower and either dehydrate small balls or eat it as a pate, it is just as good raw.

Has anyone tried this without the nutritional yeast?... or have a suggestion as what a raw substitute would be for it? thanks.

not sure if there is a substitute for nutritional yeast out there. nutritional yeast adds the cheese taste to food.

What temperature did you use for the dehydration? 115? More/less?

What did I do wrong?? This turned out terrible for me. Were those sunflower seeds supposed to be ground?? It would not stick together. Were those herbs supposed to be fresh?? That much sage and thyme and savory made it taste musty. I’ve got to be missing something here as everyone else has enjoyed it and it got 5 stars.

Humm….these looked and sounded so tasty countrygirl that I was going to make them for a party this weekend. Going to try a small batch of them and see how they come out.
