Makes about 16 cakes

Soft cakes that are slightly crispy on the outside and taste delicious.

Ingredients

  • 1 cup buckwheat flour (made from grinding sprouted and dried buckwheat groats)
  • 3 apples
  • 2 bananas
  • 1 tsp cacao powder
  • 1 tsp barley grass powder
  • 1 tablespoon maca powder
  • pinch salt
  • 1 tsp dried ginger or mixed spice

Preparation

Put the dried ingredients into the food processor, Run the processor and add in the fruit until you have a smooth batter. Take a spoonful of the batter and roll off the mixture with your finger onto a teflex sheet and tray. Dehydrate at 145 for an hour, then turn the cakes over and turn down the heat to 115 and dry until the desired texture.

I like these being like little uneven mountains on their own. The peaks are lovely and crisp. A bit like the Scottish rock cakes we used to have. Enjoy!!

They don’t look that great in the picture but they are great to eat.

Mmm these look good. I don’t have barley grass powder. Shall I just skip it? Is it just for extra nutrition?

Looks awesome. Are grains really that good? I have heard some mixed opinions about eating them.

I have lost my maca powder but this is an inspiration to either find it or get more. Thanks sweetpea!

Thanks everyone. Yes, I put a little green powder in to add some protein to the mix. You don’t have to though. Apparantly, it’s the stored cooked grains that aren’t good. Sprouted buckwheat and quinoa are used at the tree of life center and are considered ‘seeds’.

I remember being taught that grains are something to be cautious of at Hippocrates Health Institute (West Palm Beach), too… I have their 12-video set… maybe I’ll try to review them to see if they have something on the tapes about it! (It gives me an excuse to review the material.) If anyone else is curious about their opinion, though, I’d call them up or drop an email!

The tree of life center will use sprouted quinoa and buckwheat.

I made these recently and they came out GREAT! Even my rather fussy (but lovable) sister enjoyed them. Thank you for sharing! :)
