Sweet Potato Carrot Cous Cous
Serves 4
This is a delicious mix of sweet and a touch of salt.A Lovely light side dish
Ingredients
- 1 Medium Sweet Potato
- 1 Large Carrot
- ⅓ cup Pine Nuts
- ¼ cup Raisins
- ⅓ cup Chopped Apricots
- ½ teaspoon Cardamon
- 1 teaspoon Cinnamon
- dash Nutmeg
- pinch Sea Salt
Preparation
Peel and Chop carrots and sweet potato and add to your food processor along with the pine nuts, salt, cinnamon, cardamom and nutmeg. Pulse until you get a “couscous” consistency. Place in a bowl and add raisins and chopped apricots. Give a taste and see if your prefer more salt or spice and enjoy!

I tried this from www.dailyrawcafe.com last month and it is very good! Adding those spices would give it an added twist…love the flexibility of it and simple to make too. A nice way to get those raw root vegetables in to your day.

WOW! Just made it but instead of apricots I used dates. Also—not enough cardamon so I didn’t use it. This recipe is really amazing and I am enjoying it right now.
