Yummy Yogurt

This is pretty close to commercial yogurt in texture and tartness. I like to mix in some berries pureed with a little agave nectar, and sprinkle a little granola on top.

Ingredients

  • 1 cup young coconut meat
  • ½ cup cashews, soaked for at least 2 hours
  • ¾ cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon agave nectar
  • 2 teaspoons apple cider vinegar
  • ¼ teaspoon sea salt

Preparation

Blend all ingredients in a high-speed blender until smooth, adding more water as necessary.

Transfer to a covered container and allow to thicken in the fridge for several hours.

This was really good. I spooned it on top of some strawberry & agave puree I blended up, and it was fabulous… and my husband liked it too!
