Yummy Yogurt
This is pretty close to commercial yogurt in texture and tartness. I like to mix in some berries pureed with a little agave nectar, and sprinkle a little granola on top.
Ingredients
- 1 cup young coconut meat
- ½ cup cashews, soaked for at least 2 hours
- ¾ cup water
- 2 tablespoons lemon juice
- 1 tablespoon agave nectar
- 2 teaspoons apple cider vinegar
- ¼ teaspoon sea salt
Preparation
Blend all ingredients in a high-speed blender until smooth, adding more water as necessary.
Transfer to a covered container and allow to thicken in the fridge for several hours.

Mmmmmm, as a fan of Soy yogurt this looks like a delish raw alternative… can’t wait to try it.

This is absolutely fantastic. I can’t believe it’s raw. Is there a way to give 6 stars?

This was really good. I spooned it on top of some strawberry & agave puree I blended up, and it was fabulous… and my husband liked it too!
