Strawberry Peppermint Ice Cream

Makes about 2 pints

This sounds wacky, but it is really delicious-and easy to overeat lol. You may need to add more peppermint extract, depending on how minty you want it. And when you freeze the leftovers (if there is any) it really turns out like real, scoopable ice cream. If it’s too hard, just defrost it in the microwave for a few seconds, but be careful not to melt it. Kids wont even know that this is raw, it’s so creamy! SOmething with the strawberry-mint combination, because vanilla ice cream just ndoesn’t taste like this. I wish I had a picture….... anyone can post one if they make this. Enjoy!

Ingredients

  • 2 cups truly raw cashews, soaked overnight
  • 1 cup Thick Thai young coconut meat
  • 5 tablespoons maple syrup or raw agave nectar
  • 1 teaspoon peppermint extract
  • ¾ cup really frozen strawberries

Preparation

First, blend the soaked cashews in a Vita-mix. You may need to add a LITTLE water just to get it creamy. Once that’s completely smooth with no chunks, add coconut meat, and then the rest of the ingredients. You should have a totally smooth, creamy, light strawberry, minty cream.Freeze all the cream for 20 minutes, then process through a ice cream maker. Scoop that stuff out, freeze for another 20 minutes, scoop out, and eat!

Looks great—I’ll post again once I try it. But FYI, microwaves will kill all foods, no matter how long you heat for. Obviously you can make whatever choices you want, but you may want to consider this when looking to maintain the integrity of your food. Don’t mean to criticize—the recipe looks great!

Dipping the sealed container in some warm water would be fairly effective in defrosting too, so you could go that route. shrug

I’m glad everybody liked it! But ambiguous, I only put the ice cream on defrost, for like 4 seconds. No harm done! :-)
