Raw Chocolate Bars
Makes 8 small chocolate bars
This looks like real chocolate. Seriously. And angie, your son will be completely fooled because this looks exactly like a hershey bar and tastes like one too. Except without all that sugar. :) It’s impossible to eat just one bite, also! Picture coming soon :) Warning: Using coconut oil in place of cocoa butter will ruin the flavor unfortunately. Cocoa butter is expensive and the melting of it takes a while, but trust me, it’s well worth it.
Ingredients
- 2 tablespoons raw cocoa powder
- 7 tablespoons maple syrup or agave nectar
- 1½ cups raw cocoa butter
Preparation
As the cocoa butter will harden quickly after it is melted, blend everything quickly in a blender until completely smooth. Pour into chocolate bar molds or a mold that is shaped like a chocolate bar, freeze for 20 minutes. And there you go. For mint chocolate, add 1 teaspoon of peppermint extract.

Can you tell us where you get your raw cacao butter? And for how much? The places I’m finding online are so expensive – 3 cups would cost well over $30.

greenie-maybe I didn’t measure it right. I buy it from rawguru.com, where it’s about 20 dollars for a bag of five large chunks. Melt two of these chuncks in a ziplock bag, in the dehydrator, and use that. Hope this helps :)

I just bought a bunch on ebay – raw, organic, from Africa about $7/lb. It drives me a little nuts how much the raw food sites charge for things. I can’t wait for it to come.

wow greenie! That’s cheap! I should start going on there and buying some stuff. Yes, the raw food websites drive me nuts too. One time I ordered 5 bags of almonds and 3 bags of cashews from rawguru, and then another separate order for a bunch of snacks. When they sent the snacks, they duplicated the order for the cashews and almonds. So we had to return the nuts. So anoying. Now I’ll order my cocoa butter from ebay! Thanks!

I think “raw” is often used to just mean “no additives” or “unrefined” when it comes to cocoa butter (and other things). So if you’re worried about your cocoa butter being actually raw, check the description for the product carefully. rawclaire, can you (or someone else?) maybe adjust the amounts a little bit? It sounds like you didn’t actually use three cups of cocoa butter, and I can’t imagine two tablespoons of cocoa powder will be enough to flavor all that anyway. But I am eager to try the recipe!

ok ambiguous- I’ll fix it. But yes, two tablespoons of cocoa powder is actually the right amount-you’ll see. Then I won’t order it from ebay if it’s going to be not raw. I’ll just continue to rder it for a million bucks a pound at rawguru.com if it’s the only place where I can get it raw. Thanks for the info. :)

Thanks for the adjustment, rawclaire—I’ll try this soon! And I don’t mean to discourage looking for eBay (or other) bargains—I just don’t want anyone to be led down the not-really-raw path without looking around carefully. As of this writing, www.eatraw.com has cocoa butter on sale.

hey, rawclaire, question for you. Why do you use coconut butter vs. coconut oil? I’ve subbed the oil and it kind of works, if i refridge to the consistency i want. You are so practiced, i now you’ll have the answer for me. Also look at forums under avocado question—someone loking for chocolate mousse without avo, You’d be a great resource for her. Sorry for the double post. This happens a lot and I can’t delete the blank one.

lzhpt – actaully, I didn’t use coconut butter, I used cocoa butter. It’s the oil derived from the cacao bean, – or cacao butter. The secret to cooked chocolate is the cocoa butter, so I just used the raw version instead.
