Nut Butters

Makes 1 cup of nut butter

I finally figured out the secret to making nut butters. You have to add a nut oil, which will make it like real nut butter. The problem with coconut oil is that it hardens too eaily, so if you blend coconut oil with it the coconut oil will harden, creating a crumbly nut “dough”. Not what you want.

Use the same nut oil as nuts you are using. For example, if you are making almond butter, you would use almond oil, and if you’re making Brazil nut butter, you would use Brazil nut oil, macadamia oil for mac butter, etc. Just be sure to use raw nut oil. If your grocery store doesn’t have the raw kind, you’ll probably have to order it.

Ingredients

  • 2 cups raw nuts of choice, soaked overnight and dehydrated overnight
  • 5 teaspoons raw nut oil

Preparation

Process your dry nuts and oil in a food processor until creamy like a nut butter. Stop and take breaks if the butter overheats, but try to grind it continuously. There you go!

do you think you could use different nut oils with the nuts, such as brazil nuts with almond oil? Have you tried that?

Mac nut oil has a pretty mild flavor & would probably be fine with most nuts, if you cam’t get the one for the nut you’re using. Thanks for the recipe!

yes daniefon, you could do that. Macadamia oil, in my opinion, has a very strong flavor and would only work with mac butter. I havn’t tried that, so I dont have proof, but it’s just my opinion. I’m going to try macadamia oil with almond butter in a few days and I’ll let you know how it comes out :)

oh, how silly of me, I forgot I don’t even have a food proccesor. Only a vita-mix. Problem witht that is that it overheats easily and toxic chemicals can leech into the nut butters. :( Could you try it and tell me how it comes out?

Thanks rawclaire! I’ve been wondering how to do this since my health food store has been out of pumpkinseed butter for a while. You seem very creative in the kitchen. Wish you could come cook for me, I can’t be bothered to spend more than a few minutes on food preparation!

i use my vitamix to make nut butters, to keep it cool turn it off often and start with a chilled container….i put mine in the freezer for a bit beforehand…..

Rawclaire, I tried pecans with walnut oil, mainly because I had both on hand. It is delicious. I didn’t need that much oil to achieve a good consistency. Thank you for the recipe.

Winona, I used my Black and Decker ($50 @ Target), it had no trouble making the butter. Also, using 1 c. of pecans yielded one third of a 16oz jar approximately. I was curious about the cost since 16oz. almond butter=$10, walnut=$18, and 8oz. raw jungle peanut=$25!!!!

ok, last one-my processor didn’t overheat at all. i stopped it briefly to scrape it, but it didn’t need to be stopped to cool.
