Cheddary Cheeze Spread

3 cups

This is not my recipe. I got it from “The Complete Book of Raw Foods” and it is by Shazzie. I modified it a bit. I used red pepper instead of the orange or yellow as recommended in the book.

You can use this just blended or dehydrate it which is what I did.

Ingredients

  • 3 cups raw pine nuts, soaked for 2 hours
  • 4 sun-dried tomatoes, soaked for 2 hours
  • ½ small orange, yellow or red pepper, seeds and core removed
  • 1 lemon, juiced
  • 1 clove garlic

Preparation

Use just blended:

Blend all ingredients with blender until smooth. Spread on dehyrated cracker to enjoy.

Dehydate:

After blending all ingredients, spread mixture on dehydrator sheet about 1/4 inch thick and dehydrate at 115 about 6 to 24 hours until firm as you want. ( I dehydrated longer and they were harder and were sort of like baked dairy cheese – I put on my Raw Pizza!). Remember to flip over in middle of dehydrating time.

I use a version of this on Shazzies pizza. It is SO much better than the cheese with corn that the recipe calls for.

I use something similar too and put it over angel hair zucchini or sweet potatoe to make mac and cheese. I dehydrate it and the top gets almost crusted – yum!!!
