Dandelion Salad
Serves 2-4
Yummy dandelion salad with rich creamy pine nut dressing. You don’t even know you’re eating dandelions but you’re getting the full nutritional and liver cleansing benefits.
Ingredients
- 1 bunch dandelions
- 1 red bell pepper
- 3 romaine lettuce leaves
- 3 spring onions
- 1 beet
- 1 carrot
- PINE NUT DRESSING
- 1 cup pine nuts
- 1 clove garlic
- juice from half lemon
- dash sea salt
Preparation
Chop the dandelions, lettuch, bell pepper and put into a bowl. Slice the spring onion and grate the beet and carrot and add to the greens. Blend up the pine nuts and other ingredients to make a creamy sauce, add more nuts and seeds to get the thickness of sauce you like.
Mix the creamy dressing through the salad, yum!!

How much is a “bunch”. I have seen small bunches, and large long leaves with big bunches. My farmers market sells them in bulk form. Also…do you soak the pine nuts first?

Hi, a bunch for me is usually a good handful. I never soak pinenuts but you can if you want to.

Is it cool to use dandelions from my yard? We didn’t spray chemicals on it and we don’t have a dog. I pull them anyway!

starla, if you don’t use anything on your lawn and you know no one has for years, as dandelions are long lived, at you pick at least 50 feet from roads with any sort of regular traffic, you can. Ideally don’t pick too close to your neighbors lawn unless you know the same about them.
