Lunchbox Banana Split

I picked up this recipe from a family activities paper and just changed the nut butter to raw. My 2 year old loves it, especially when I mash raspberries and make into a ‘drizzle’ and pour over the banana. The (non-raw) neighbor children ask for the ‘special’ banana as well! Hope you enjoy!

Ingredients

  • 1 small banana
  • 1½ teaspoons raw nut butter, your choice
  • 1 tablespoon (total) from any of the following "sprinkles": sunflower seeds, granola, chopped nuts, coconut, raisins, raspberries, strawberries or dried cranberries., You will probably use more than the suggested 1 tablespoon if you use fruit.

Preparation

1 Slit the unpeeled banana lengthwise down the middle, taking care not to cut it all the way through.

2 Spread the nut butter on one half of the split side of the banana, tightly wrap the peel around the banana and then trim both ends a bit to make it easier to peel at lunchtime. The banana should stay fresh and not turn brown.

3 You can either send the sprinkles separately or you can put them on banana before you wrap. The benefit of having them separate is being able to have more to put on, but if your child (or you) will forget than it doesn’t matter if you have more! ;)
