Juan's Tacos Flacos (Skinny)
Makes 4-6 tacos
This nutless main dish was named after my good friend’s EX-husband…......

Ingredients
- 1 cup butternut squash, cubed, I used the pieces that were left from spiralizing for another meal, I have also made this with yam and carrots
- ½ red bell pepper
- 1 teaspoon each ground coriander and cumin, possibly more-to taste
- pinch each, salt and cayenne pepper, possibly more-to taste
- 1 tablespoon olive oil
- 1 large tomato, diced
- 2 tablespoons cilantro, minced
- 3 green onions, sliced
- ½ clove garlic, minced
- ½ lime, juiced
- kernels from 1 ear of corn, optional
- salt & pepper, to taste
- avocado slices or your fav guac
- collard green leaves, 1 per taco
Preparation
1. Using a food processor, process squash and red pepper until finely minced. If you don’t have a processor, a grater would work.
2. Mix in coriander, cumin, olive oil, salt and cayenne. Taste and adjust seasonings.
3. Mix tomato through corn to make pico de gallo (a fresh salsa for topping). You can add a little minced jalapeno or serrano chili for a little extra heat.
4. To serve, divide squash mixture among collard leaves, placing in center.
5. Top with pico and avocado slices or guacamole.
6. Enjoy!

I topped mine with a little cashew sour cream (obviously not nutless!) and some chopped black olives.

Firstly, haha! I love why you named it. Secondly, YES!!!!! I have been wanting to know what to do with the butternut squash I am growing this year. I love it to death, but it’s a bit much to just slice up and eat plain. :) Thank you.

have mersey, my absolute favorite ways are spiralized with olive oil, garlic, salt and pepper. And, spiralized, then cut into 1 inch pieces and topped with rich cheddar sauce from this site. I love those two so much that I had to figure out what to do with the leftover pieces!

i made this last night, and it’s really delicious!!! :9 i added a little cinnamon to it, to see what it would be like, and it totally tastes like this amazing wheat pilaf pita sandwich i used to have, at a little sandwich shop called Oasis, in Ann Arbor…. so good!

I really want to try this, but I don’t have a food processor—could my blendtech handle this well? (I just bought it yesterday, so don’t know all it’s capabilities yet.

I don’t have a blendtec, so I am not sure how it will work. The final texture is that of something that has been very finely grated. I am sure it would work pretty well. I might grate it first so that you don’t have to overmix it.

These were VERY good! I love using all veggies in a meal (without nuts).
I used some zucchini in mine, leftover from another meal, and instead of making them like tacos, I spread a layer of guacamole, then a layer of taco flaco meat, then the pico de gallo on top, and kindof made a mexican pizza thing. It was really yummy!
