Perfect Caramel Dip

Serves 4-6

Yesterday began my desperate search for the perfect Raw caramel dip. It belongs to Heidi at Raw Food, Right Now. Next came the brownie recipe from Jennifer Combleet on this site. You can imagine what happened next…This is a kid tested and kid thumbs up recipe!

Ingredients

  • 2 cups dates, soaked 1 hr. in lemon water
  • ½ cup Pure Maple Syrup,or dark agave
  • 1 tablespoon vanilla
  • 1 teaspoon sea salt
  • ½ lemon, juiced

Preparation

See brownie recipe on this site from Jennifer Combleet—just roll them into little balls instead-no dehydrating needed. Stop nibbling or you won’t have any left for the dipping! Prepare the brownies or slice up some Granny Smiths while you are soaking your dates in lemon water—1 lemon, juiced into enough water to cover the dates. Blend and whip the caramel dip ingredients in the vitamix. Please adapt as per your raw practice—the maple syrup adds the best flavor.

what about using agave and a little mesquite?

Never tried it. Please try it and post back. Most raw recipes for this call for the maple syrup—I’d love to rawify it even more. The people who have used agave(which is also not raw, even if it says so) say the taste is not right.
