RAWmond Joy Power Truffle

Appx 12 truffles

Reminicent of an Almond Joy, these truffles are a great pick-me-up and they take only 15 min to make! Kids love to make (and eat) these too! They are great to pack in a lunch or for travelling.

Ingredients

  • 7 medjool dates, seed removed
  • 2 tablespoons cacao (or carob) powder
  • 1 teaspoon lucuma powder
  • 1 teaspoon maca powder
  • 1½ tablespoons raw honey
  • 2 cups shredded unsulphered coconut
  • 12 almonds
  • goji berries, soaked 2 hours, (opt)

Preparation

In a food processor, blend dates, cacao/carob, lucuma, maca, and honey (add goji berries too if using). A ball should form. Then add coconut and blend again. This will form little chunks. Remove a tbsp size amount and roll into ball. Insert an almond in the center and seal the truffle around it.

That’s it! Easy Peasy! ;0)

(if you want to get more creative you can use a cookie cutter to shape the balls into something else)

stRAWberry – I extrapolated on the coconut

jeshuabrown – I keep mine in the fridge and then when I want to use them I put them in a plastic bento container. They haven’t melted on me yet…but I am in upstate NY so it isn’t like I am 100+ degree weather. I haven’t put them to that test yet ;0)
